Organic food is basically unadulterated or “natural” food, grown using farming methods that exclude modern synthetic inputs, such as chemical pesticides or herbicides, growth hormones, ionizing radiation, genetic modifiers (GMO) and without sewage sludge fertilizers (which often contain highly toxic recycled heavy metals and other pollutants). Certification - To be considered “legally” organic, food has to be certified as such. The Department for Environment, Food and Rural Affairs (Defra) is the governmental body in the UK responsible for regulating the production of organic foods and the administration of organic schemes. The key requirement is that all organic food must meet a common set of minimum standards that are set out in European law. It can take a number of years for a conventional farm to convert to organic farming  methods. Labelling - Labels on food sold as “organic” are required to indicate the organic certification body that the processor or packer is registered with. It is not always possible to make products entirely from organic ingredients, since not all ingredients are available in organic form. Manufacturers of organic food are permitted to use specific non-organic ingredients provided that organic ingredients make up at least 95% of the food.  Why choose organic food? Organic foods are all about the elimination of chemicals from our food for a healthier way of life, environmental conservation and animal welfare. Organic nutrition - Food manufacturers often inject the foods they sell with chemicals and preservatives, in order to prolong their '”shelf life”. Organic foods are produced by organic farmers without the use of toxic chemicals, pesticides and other synthetic compounds and so their natural goodness is maintained. There is mounting evidence to suggest that such foods typically contain more vitamins, minerals, nutrients and digestive enzymes and taste better than their intensively-farmed counterparts, grown using non-organic methods. Environmental impact - Pesticides and insecticides have been shown to have a major effect on the global ecosystem.  The synthetic, toxic chemicals used in commercial farming, for example, can be deadly to birds and other wildlife that depend on the land for food. Animal welfare - This is also an important aspect of organic food production, because animals bred through organic means have to be kept in the open for a specified amount of time and there are also guidelines for the general care of the animals.
